How to create lifelong memories for your kids

Christmas is a magical time for many kids.  Certainly for me, it was a time to enjoy playing with my out-of-town cousins, and to eat special treats that were only prepared at this time of year.

Now it’s our turn to create lifelong memories for our kids

Now that we’re a little older, it’s time for us to create pleasant memories for the kids (and adults) who come to celebrate the holidays at our homes. And what better way to create lifelong memories than with food!

This year, I turned to my childhood for inspiration to prepare a beautiful, yummy, and kid-friendly treat: the traditional Mexican Christmas Salad.

And I thought to share it here in case you want to feel adventurous, cosmopolitan, or just willing to make something easy for that holiday party in which you have no clue what to bring:

I found this healthier version of the Traditional Mexican Christmas Salad*, which is just as beautiful and even tastier than the one I remember from when I was a kid.

Here is the translation of this super simple recipe:

Ingredients

  • 2 cups green apple, cut in medium cubes
  • 1 cup red apple, cut in medium cubes
  • 1 cup shredded carrots
  • 1/2 cup celery, finely chopped
  • 1/2 cup pineapple, cut in medium cubes
  • 1/2 cup red seedless grapes, cut in halves
  • 1/3 cup unflavored greek yoghurt,
  • 1/4 cup chopped pecans or walnuts (only if everyone is nut allergy-free!, otherwise, you could use shelled sunflower seeds)

How to make it

1. Cube the apples (leave the skin on). Cut the pineapple in cubes of similar size as the apples.

2. In a bowl, mix all the ingredients (except the nuts), and store it in the fridge, covered, until it’s time to serve it.

3. Just before serving, add the finely chopped nuts and mix well.

4. Decorate with more nuts if you wish.

And that’s it! It’s so easy that a child can make it

Something else that I really like about this colorful and sweet salad is that kids can participate in the preparation of it.
